For more than a century, our family, here at Checchino since 1887, has specialised in what is known as fifth-quarter cuisine.
What does this cuisine consist of?
The Fifth Quarter is a mathematical absurdity to indicate that part of the beast that is not included in any of the noble quarters, neither in the front two nor in the back two. This fifth quarter, whose weight is equivalent to that of a noble quarter, consists of the head, tail, legs and all the innards of the animal.
With this raw material, most of the dishes of the typical Roman cuisine of the Testaccio district are made.
